NO COOK GROOVY COCONUT® AND PAPAYA CURRY

No Cook Groovy Coconut and Papaya Curry

I never heard of a fruit curry and I never heard of a curry that wasn't cooked. But that's what my British friend forwarded to me. I made the recipe tropical, and voilá. It became a dish with fans on both sides of the pond.

INGREDIENTS:

Curry Dressing

1/2 cup cashew nuts
1 red bell pepper
1/4 cup water
1 tsp curry powder
1/2 tsp turmeric
1 Tbs tahini
1 lime

Fruit Base

1/2 cup Groovy Coconut, flaked or chopped
1/2 cup raisins
2 bananas, cut in half lengthwise and cut into 1/2" pieces
1 Solo papaya, chopped into 1/2" pieces
1/4 cup peanuts, chopped

Yield: 4 servings
Prep time: 20 minutes

DIRECTIONS:

1. In a food processor, add the cashews, bell pepper and water. Pulse until finely chopped.
2. Scoop the cashew mixture into a medium bowl. Add the curry powder, turmeric, tahini and the juice of 1 lime.
3. In a large bowl combine the fruit ingredients. Add the cashew mixture to the fruit. Toss to combine.
