NO COOK GROOVY COCONUT® AND PAPAYA CURRY
I never heard of a fruit curry and I never heard of a curry that wasn't cooked. But that's what my British friend forwarded to me. I made the recipe tropical, and voilá. It became a dish with fans on both sides of the pond.
1/2 cup cashew nuts
1 red bell pepper
1/4 cup water
1 tsp curry powder
1/2 tsp turmeric
1 Tbs tahini
1/2 cup Groovy Coconut, flaked or chopped
1/2 cup raisins
2 bananas, cut in half lengthwise and cut into 1/2" pieces
1 Solo papaya, chopped into 1/2" pieces
1/4 cup peanuts, chopped
Yield: 4 servings
Prep time: 20 minutes
1. In a food processor, add the cashews, bell pepper and water. Pulse until finely chopped.
