CHAYOTE MELON CHILL

Chayote smoothie

Chayote is refreshing. There's no need to add ice to a summer's smoothie to get the same effect. You can add almost any fruit from the kitchen counter fruit bowl and this works.

INGREDIENTS:

1 chayote
1/2 lb. cantaloupe pieces
1 tsp cinnamon
4 oz. almond milk
1 tbsp honey
1 lime

Yield: 2 servings
Prep time: 5 minutes, plus 2 hours refrigeration.

DIRECTIONS:

1. Peel the chayote. Cut off its ends. Put in a blender.
2. Add the cantaloupe pieces, cinnamon, almond milk, honey and juice of 1 lime to the blender. Blend until relatively smooth.
3. Refrigerate at least 2 hours. Serve chilled.
