DILLED BONIATO SOUP

Boniato soup

INGREDIENTS:

1 large boniato, peeled and cubed
1/4 cup butter
1 cup coarsely chopped onion
1 clove chopped garlic
1 cup plain yogurt
1 cup skim milk
2 spring onions
1/2 cup chopped fresh parsley
1 tbs dried dill

DIRECTIONS:

1. Place boniato in a saucepan, cover with water and cook until tender.
2. Drain liquid, add butter, onion and garlic.
3. Sauté until onion is clear and wilted.
4. Stir in yogurt and skim milk and heat until warm.
5. Add spring onion, parsley, and dill and heat to serving temperature.
