UNIQ FRUIT RADICCHIO SALAD
1 head of radicchio lettuce (round kind)
2 Uniq fruits, peeled and sectioned
1 sweet onion, sliced into rings
1/4 cup balsamic vinegar 2 tbsp. fresh lime juice
1/4 cup lite olive oil
Salt and pepper to taste
Cut the radicchio in half, carefully remove the outer leaves to form 4 nests (concave shape). Arrange half of a Uniq fruit in the middle of each radicchio nest. Grill or sauté sweet onions; divide into nest. In a salad shaker, mix balsamic vinaigrette. Sprinkle the nests with the vinaigrette.

UNIQ FRUIT & FENNEL SALAD
Thin slices of fennel combine with the citrus flavor of Uniq fruit in a tangy vinaigrette for a refreshing fall salad.
40 spinach leaves, cleaned and stemmed
4 Uniq® fruit, peeled and sectioned
1 fennel bulb, cleaned, quartered and thinly sliced
2 ripe medium tomatoes, cored, seeded, and cubed
Arrange 10 washed and patted dry spinach leaves on 4 individual salad plates. Place Uniq sections in a pinwheel on the spinach leaves. Sprinkle thinly sliced fennel in center of salad.
Place 1 tablespoon cubed tomato between each Uniq fruit section. Dress with Lime Vinaigrette.
Serves 4.
LIME VINAIGRETTE
1 clove garlic, crushed 1/2 tsp. salt
1/2 tsp. Dijon-style mustard
3 tablespoons Brooks fresh lime juice 1-1/2 tbsp. Grand Marnier or other orange liqueur
3/4 cup olive oil
Using a fork, mash garlic and salt to a paste in a small bowl. Stir in mustard, lime juice, and Grand Marnier.
Gradually whisk in olive oil until mixture is smooth and thick. Adjust the flavor by adding more lime juice or olive oil if needed.
Makes 1 cup.
