PAPAYA AND SLIMCADO SALAD

This unusual tropical salad tastes as good as it looks. It makes a good first course arranged on lettuce leaves, or a good accompaniment to simple grilled chicken, beef, or lamb.

1 SlimCado, peeled, pitted and cut into 1 inch cubes
1 Caribbean Sunrise or 1/2 Caribbean Red papaya, peeled, seeded and cut into 1/2 inch cubes
1 ripe tomato, cut into 1/2 inch cubes
1 can (14 ounces) hearts of palm, drained, rinsed and cut on the diagonal into 1/2 inch pieces
Salt and pepper to taste
Lime vinaigrette (recipe follows)
1/4 cup julienne strips of chayote for garnish

Combine SlimCado, papaya, hearts of palm, and tomato in a large bowl. Season with salt and pepper. Sprinkle with lime vinaigrette and toss gently. Refrigerate, covered, for 1 hour. Divide this mixture on salad plates. Garnish with chayote strips. Serves 4.

LIME VINAIGRETTE

1 clove garlic, crushed
1/2 tsp. salt
1/2 tsp. Dijon-style mustard
3 tbsp. fresh lime juice
1-1/2 tbsp. Grand Marnier or other orange liqueur
3/4 cup olive oil

Mix all ingredients together.


PAPAYA GINGER BARBECUE SAUCE

1/2 Caribbean Sunrise or 1/4 Caribbean Red papaya, peeled, seeded and sliced
2 tbsp. fresh grated ginger
2 1/2 cups orange juice

Reserve a few papaya slices for decoration also. Purée papaya, grated ginger and orange juice in a blender of food processor until smooth. Baste chicken during the last 10 minutes on the grill.


CARIBBEAN PAPAYA MILKSHAKE

3 Caribbean Sunrise papayas or 1 Caribbean Red papaya, peeled, seeded and diced
1 ripe banana, diced
3/4 cup milk
1/4 cup heavy cream
1 cup crushed ice

In a blender, purée the papaya, banana, milk, cream and crushed ice. Pour into four tall glasses and serve.


PAPAYA SALSA

1 ripe Caribbean Sunrise papaya, peeled and seeded
1 small red bell pepper
1 small red onion
1 scotch bonnet pepper
6 tbsp. fresh lime juice
1/4 cup pineapple juice
1/4 cup fresh cilantro
salt and pepper to taste

Dice the papaya, red pepper and red onion. Using rubber gloves, finely mince the Scotch bonnet pepper. Combine with remaining ingredients in a medium bowl.
