Description:

The kumquat (KUHM-kwaht) is a small, bright, orange, citrus fruit. It ranges in shape from oblong to round. The edible golden orange rind is sweet, while the rather dry flesh is very tart. Very ripe fruit can be sliced and served raw in salads or as a garnish. Kumquats are usually cooked, whether candied or pickled whole in preserves or marmalades. Kumquats are an excellent source of potassium and vitamins A and C.
