SIMPLE PUREE
Cut up the rinsed fruit (no need to peel) and puree with some sugar and lime juice to taste. Chill. Top angel-food cake, serve as an accompaniment to pork or ham, use as a sauce for rice.
GUAVA FOOL
2 guavas 4-6 tsps sugar ¼ cup whipping cream, not ultrapasteurized
Rinse guavas and trim off blossom ends. Cut in 1-in pieces; Puree in a blender. Add sugar as desired. Press through a fine nonaluminum sieve. Cover and chill. Whip cream to form soft peaks. Genly fold into the fruit puree creating swirls.
