The chayote has the appearance of a gnarled pear. Its deeply ridged, smooth skin ranges in color from light to dark green. Inside, its white flesh houses a firm seed, which becomes edible after cooking.

Taste: Cousin to the squash, chayote has the crisp blend of a cucumber and a zucchini.
Selection: Look for firm, unblemished chayote. Those that are smaller in size are tender. This is an indication of immaturity and poor quality.
