Frequently round, more commonly pear-shaped, the calabaza ranges in color from solid green to orange. The skin may also be striped or speckled with a smooth surface. The fine-grained flesh is ravishingly orange and moist. The calabaza is handled similarly to the pumpkin squash, and is used to enhance the texture and flavor of soups, salads, sauces and breads.
