| Frequently round, more commonly pear-shaped, the calabaza ranges in color from solid green to orange. The skin may also be striped or speckled with a smooth surface. The fine-grained flesh is ravishingly orange and moist. The calabaza is handled similarly to the pumpkin squash, and is used to enhance the texture and flavor of soups, salads, sauces and breads. |

Taste: The calabaza is comparable in flavor and texture to the traditional pumpkin squash.
Selection: When mature, calabaza possess a smooth, hard-shell surface. This squash should be heavy in comparison to its size. It should have a dull rind and an attached, solid stem.
