This tropical sweet potato, also called The Cuban sweet potato, resembles an Idaho russet. Boniatos are semisweet, semidry and very versatile.

  • Taste: Commonly compared to the traditional sweet potato, its flesh is fluffier and less sweet with a slightly nutty flavor.
  • Selection: Choose boniatos that are rock-hard, without soft, moldy spots. Normally, they have an irregular shape with white flesh and reddish skin color.
